I used to love making stuffed bell peppers but I noticed it was always a little messier to eat, cost a bit more, and took way longer to cook.
Thus was born one of my go-to recipes: Vegan Bell Pepper Bowls!
The best part about this recipe is that it's totally customizable. Don't like brown rice? Use white. Prefer refried beans? Send it! Use whatever you want and how ever much of it you want.
Vegan Bell Pepper Bowls
Ingredients
Vegan ground beef (I like the Trader Joe's Beef-less Ground Beef or Gardein best. Pictured is the Beyond version and I really didn't like it)
Taco seasoning (I'm a sucker for Taco Bell's taco seasoning mix but the Target brand is a great dupe for it if you can't find TBell's)
Cooking oil
1 cup rice
Bell peppers (I live for the bags of mini bell peppers)
Tomato
Yellow onion
Garlic
Black beans
Corn
Lettuce
Directions
1. Start with cooking the rice. Set it and forget it!
For brown rice: rinse, sauté in a bit of cooking oil, then add in water and cover for about 30 - 45 min.
2. Depending on which vegan meat you're using, time makes a difference.
For Trader Joe's Beef-Less, I'll start cooking it after setting up the rice. For Gardein, it takes way less time so it's actually my last step. Whenever you decide to cook the vegan meat, follow the instructions on the packaging. Generally, add oil to the pan and toss that bad boy.
3. Add chopped yellow onion and garlic to the "meat" mixture.
How much? Measure that with your heart.
4. Add in taco seasoning and water. Stir while it reduces.
The Taco Bell seasoning calls for 3/4 cup water but that amount will not reduce well and you will end up with a soggy mess. Add in *some* water. My advice is to eyeball it and add a little at a time.
5. For an extra kick, add Tapatio to the "meat" mixture.
6. Chop up some tomato, bell peppers, and lettuce.
7. Pop open a can of corn and a can of beans.
8. Assemble it all in a bowl!
Notes
Other toppings can include vegan sour cream and cheese but I'm ballin' on a budget so I usually skip those.
