Fall is kicking in and so is my need for baked goods.
I went to Riley's U-Pick Farm in American Fork, Utah this last weekend and had a blast!
They offer free admission, free tractor rides, and already have so many pumpkins available. There's also almost always a food truck or two on hand so this is a great place to spend a few hours! Social distancing was no issue and we wore masks while on the tractor ride so it felt safe as can be.
Peaches were my main focus but I also picked some apples, tomatoes, and squash (which I made some delicious spaghetti out of).
This was my first time making peach cobbler and I gotta say, this might be one of my new go-to dessert dishes!
Peach Cobbler
Ingredients
3 Peaches
Sugar
Cinnamon
Butter
Flour
Salt
Directions
1. Slice peaches.
2. Spray a baking dish with cooking oil and add in the peaches.
3. Toss peaches with 1/4 C of sugar and as much cinnamon as your heart tells you.
4. Cut butter into small cubes and toss over the peach mixture.
5. In a bowl, mix together about 1/4 C melted butter, 1/2 C flour, a dash of sugar, a sprinkle of salt, and again- as much cinnamon as you'd like.
It will have a thicker consistency, almost like sand! This is good.
6. Add the mixture to the peaches.
7. Bake for 20 minutes at 375 degrees. Allow it to cool for about 10 minutes.
8. Serve! I added vanilla bean ice cream on the side. I think some caramel could have been delicious as well.
