Every time I go home, my mom makes me raid her kitchen pantry. Seriously, if I even try to bounce without at least 10 lbs. of food, she probably won't let me leave.
One of the more recent hauls from home included a jar of pesto.
I'm not usually big on pesto but I took a leap of faith and created one of the best pizzas I've ever made- rated as a 7/10 on @StephEatsPizza!
Pesto Pizza
Ingredients
Dough (I've been using store-bought)
Mozzarella
Parmesan
Olive Oil
Garlic Salt
Pepper
Basil
Cherry Tomatoes
Red Onion
Salami
Spinach
Pesto (got mine at Aldi)
Minced Garlic
Balsamic Glaze
Directions
1. Cover the dough in olive oil, including the crust.
2. Add pesto and sprinkle over garlic salt.
Make sure to add extra to the crust for maximum flavor.
3. Add salami and pieces of mozzarella.
I buy a block of mozzarella from Winco and chop it up into smaller pieces.
4. Chop up onion, cherry tomato, spinach, and basil. Add to the pie.
5. Toss over some minced garlic.
6. Top with parmesan and freshly-cracked pepper.
7. Finish up with some swirls of balsamic glaze.
8. Toss in the oven for 10 minutes at 350 degrees.
Enjoy!
Notes:
I don't really measure how much I use of every ingredient. It's a pizza- you measure with your heart.
I love this recipe on a thinner crust!
